There not suitable for the current roads. It feels like a stage of Paris - Roubaix, so gone back to some modern Vittoria 23s

The current trend for fat tyres is due to one thing in my opinion, modern carbon fibre being so uncomfortable to ride. Back in the day anyone turning up with fat tyres would be laughed at. Anything more than 25 just looks awful.

I don't like carbon bikes. The fact remains they are very comfortable , I've ridden hundreds of steel and alloy frames. Carbon takes the sting out of the road, fact. The 35s on my tourer are great.
