Spiral "barber pole" paint on the seat tube is a Mercian thing, probably not exclusive to them though

If I'm not wrong, those pad holders are for cantis, not Vs. You will need the specific XT pads. XTR might also fit.

It has a fair few things in common with my Yates, but there are also quite a few differences and I don't think it is. Plenty of custom options available at most builders though, so it might be difficult to determine 100%!

My lad's u-brake version GT Pantera is 1_1/4" threaded. I imagine other GTs from that period will be the same

Try a different locking, the one in the photos looks quite thick, plus if the threaded section is longer than usual then it will be tightening against the hub and not the cassette, that would explain the loose sprockets with tightened lockring.
