8 speed 130mm?

I would shorten the axle on a 135 hub and remove 5 mm of spacers from the left hand side. If you modify an existing wheel you will have to re dish it too.
 
Road hubs are 130mm OLN in 8 and 9 speed variations (and in ten and eleven as well, but I stop at nine). Shimano road hubs are tough enough for off-road use, and some newer models have better seals than older mountain bike hubs. I've put plenty of off-road miles on Ultegra 6500 hubs, for example.

If you want to use a cassette with an 11t small sprocket, make sure your freehub is Hyperglide-C compatible:

Another way to do it is to use eight 9-speed-spaced sprockets on a 7-speed 130mm freehub. Just buy an 11-32 9-speed cassette and throw the 11t sprocket away. You'll need the lockring from a 12-up cassette, and 9-speed shifters and chain.
 
I have a set of 8 speed wheels and shifters but my frame is 130mm and they are 135. I have a set of 7 speed wheels that fit well they are the originals (dx hub wolber rims saracen wheels). Dont really want to cold set the rear triangle myself and no frame builders near me that I know of. Cant even squeeze the wheel in rear triangle is well stiff. :(
 
White Industries came with the option of 130 or 135. You would need the spacer that came with the hub I think.

Just got a pair of low miles White Industries hubs that would have had that option but I didn't get the spacer.
 
Chris King classic (non disk) hubs can be respaced easily from 130->135->140 with the same hub body, different end cap/spacer.
 
This may or may not be relevant - just bear in mind that you will have 5mm of axle sticking out somewhere or other and this may be just enough to stick out proud of the frame preventing the QR from doing up.
